Flooring must be smooth on base coving and under equipment, shelving, <br />sinks, and counters. The flooring shall be of an approved type that continues up the wall four (4) inches, in a seamless manner, forming a 3/8 <br />inch minimum radius cove as an integral unit. Vinyl/rubber topset coved base and/or the vinyl composition tiles (VCT) are not acceptable. Some <br />slim foot ceramic, quarry and metal topset cove bases are generally acceptable. Submit samples of the proposed flooring and base cove for <br />approval prior to installation. Concrete floors are to be patched so as to remove cracks and divots. If floor sealer is to be used, provide detailed <br />specifications on the proposed floor sealer for evaluation and approval. The sealer must be an approved clear penetrating sealer that is oil, acid, <br />and water resistant; pigmented sealers and epoxy paints are not acceptable. When excessive amounts of slip resistant agents are used, a <br />high pressure cleaning system or equivalent must be provided with drainage to floor drains. (114268, 114269). <br />CEILING <br />Approved ceilings are required over all food and utensil handling areas, in restrooms and janitorial areas. Exposed beams must be flush and <br />sealed to the ceiling to prevent any gaps where dust or vermin can accumulate. Hanging beams, pipes, fire sprinkler lines, conduit, décor, or <br />other dust-and-vermin collecting items are not permitted over food and utensil handling areas. (113980, 113984, 114179, 114271). <br />WALLS <br />The wall surfaces behind sinks shall be covered with Fiberglass Reinforced Plastic (FRP), stainless steel, or the equivalent.The approved wall <br />cover must extend up the wall at least four (4) feet from the back splash and cover the walls behind the sink and accompanying drainboards. <br />The wall surface in the area where the dish machine is installed shall be covered with FRP, stainless steel, or the equivalent. The approved wall <br />cover must extend up the wall at least eight feet from the floor and cover the walls behind the <br />dish machine and accompanying drainboards. If high pressure spray cleaning equipment is proposed or required to clean nonskid flooring, then <br />wall surfaces in these areas must be covered with an approved water resistant covering (i.e., FRP, stainless steel, or the equivalent) to a <br />minimum of four (4) feet above the base cove. Indicate approved wall surfaces if you will be installing high pressure spray cleaning equipment. <br />(§114268, 114269, 114271). <br />WAREWASHING SINKS <br />Warewashing sinks shall have at least three compartments with two integral metal drainboards. Sink compartments shall be large enough to <br />accommodate immersion of the largest utensil; a minimum compartment size of 18" wide by 18" long by 12" deep is requried unless otherwise <br />specified by this department. The utensil sink shall be installed to have a minimum 2" clearance between end walls, or have an integral end- <br />return that goes up the wall 8" and is sealed to the wall. (114097, 114099, 114130.1, 114169). <br />CLEAN IN PLACE <br />Equipment or utensils that are fixed or are too large to fit in the warewashing sink or machine must be equipped with clean-in-place <br />facilities. The minimum requirements for clean-in-place facilities are: <br />a) Hot (minimum 120 °F) and cold water dispensed from a mixing faucet. <br />b) Hoses must be food-grade/for potable water use, and have an approved backflow prevention device. <br />c) The wastewater must be drained by indirect connection to an approved sewer line. (i.e., trench drain). (114099.3) <br />HANDWASHING SINK <br />Handwashing facilities shall be sufficient in number and conveniently located and unobstructed so as to be accessible at all times for use by <br />food employees. Handwashing cleanser and single-use sanitary towels must be provided in dispensers at all handwashing facilities. Hot air <br />blowers may be provided in lieu of the hand towel dispensers. All handwashing facilities shall have warm water supplied through a mixing valve <br />or combination faucet at a temperature of at least 100°F. If the temperature is not readily adjustable at the faucet, the temperature shall be at <br />least 100°F but not to exceed 108°F. (113953) <br />JANITORIAL SINK <br />A curbed cleaning facility or janitorial sink equipped with hot (120°F) and cold water and a drain shall be provided. The janitorial sink <br />must be securely attached to the wall, the rim of the sink shall be no more than 30" above the floor. The wall surfaces behind and for 24 inches <br />around the janitorial sink shall be water-resistant usch as Fiberglass Reinforced Plastic (FRP), tile, stainless steel, or equivalent. Provide a <br />chemical storage shelf and mop rack in the janitorial area. (114279, 114281, 114282) <br />FLOOR SINKS AND FLOOR DRAINS <br />All equipment which generates condensate or similar liquid wastes shall be drained by means of indirect waste pipes into a floor sink. Floor <br />drains are not to be used in lieu of floor sinks. All floor sinks must be at least half-exposed under the curb mounted equipment, or be in line with <br />the front face of elevated freestanding equipment, and located within 15 feet of the condensate producing equipment. A properly coved <br />protective enclosure will be required around the backside of half-exposed floor sinks where the floor sink is installed under curb or base <br />mounted equipment, e.g., storage cabinet, display refrigerators, etc. Provide easily removable (without the use of tools) safety grates on <br />exposed floor sinks. Floor drains are required in floors that are water-flushed for cleaning, where pressure spray methods for cleaning <br />equipment are used, and where slip resistant agents are used on floors. Where floor drains are utilized, the floor surface shall be sloped 1:50 to <br />the floor drains. Where floor drains are required for slip resistant floor surfaces inside walk-in refrigeration units, the floor shall be sloped toward <br />the door to a trench drain or a floor drain located within the swing of the door. For sheet vinyl floroing, provide a special locking floor drain. <br />Provide specifications on the locking clamp floor drain(s).
