<br />GREASE INTERCEPTOR MEMORANDUM <br /> <br /> <br />To: Jaime Nunez – Applicant Date: May 28, 2024 <br /> <br />From: Hector Medina – Assistant Engineer, PWA <br />Water Resource Division <br />Location: 215 W. 4TH ST. – DON CHURROS <br /> <br /> <br />The above referenced food service establishment (FSE) must comply with the Fats, Oils, and Grease <br />(FOG) Control Program Rules and Regulations as identified in Ordinance NS-2921 and as follows: <br /> <br />A Hydro-Mechanical Grease Interceptor (HGI) is required at this FSE. <br /> <br />☒ This FSE shall install a Hydro-Mechanical Grease Interceptor (HGI). <br />☐ This FSE shall maintain the existing Hydro-Mechanical Grease Interceptor (HGI). <br /> <br />This FSE qualifies for at least one of the following condition(s): <br /> <br />The FSE discharges to a documented Enhanced Maintenance Location sewer but the proposed FSE’s <br />FOG discharges are projected to be negligible and will not likely cause a significant impact to the sewer <br />system, or; <br /> <br />A gravity grease interceptor (GGI) cannot be installed due to physical site limitations or inadequate <br />slope between the interceptor and private and/or public sewer lines. <br /> <br /> <br />C/c: Water Resources Division <br /> Planning & Building Agency <br /> OC Health Care Agency <br /> Public Works Agency (Development) <br /> EEC Environmental <br /> Applicant <br /> <br />215 W 4th St <br />1/22/2025
