Dairy products shall be of least USDA Grade A. Butter may be substituted for <br />margarine when it is a commodity item. 1% or 2% fresh milk fortified with vitamins <br />A and D shall be served as a beverage. Dry/powdered milk may be used in <br />cooking/baking only. <br />h. Eggs shall be at least USDA Grade B Medium. <br />If available, fresh fish and seafood are preferred. Frozen fish and seafood must <br />be a nationally distributed brand, packed under continuous government inspection. <br />All breaded products must have a product weight of no less than 3 ounces before <br />breading. <br />Bakery products - A minimum of 60 percent whole grain products must be used. <br />Day -old breads may be purchased but must be used within 48 hours or frozen until <br />the time of use. <br />k. Contractor shall not purchase "second market' and/or distressed food items. <br />Contractor must provide for the correct handling, prompt storage and <br />rotation/issue of food items purchased for use in the facility. Products <br />which have been frozen in excess of one year and/or are past the <br />manufacturers/processors established or implied pull/freshness <br />expiration date may not be served. <br />Contractor must provide a statement as to how often a physical inventory <br />of non -processed food and supply items will be taken, The method for <br />conducting the inventory and the disposition of data collected must be <br />explained in full detail. <br />D. FOOD SERVICE EQUIPMENT AND PERIPHERAL SUPPLIES <br />1, Contractor shall have full operational understanding of all City -owned food service related <br />equipment in carrying out the requirements of the contract.
