The female inmate menu shall be designed to incorporate the California Corrections <br />Standards Authority, Code of Regulations, Title 15 standards for milk consumption for <br />pregnant or lactating women. <br />4. The following Items must be considered in all menu planning, food selection, and meal <br />preparation: <br />a. The ethnic demographic of the facility is 75% Hispanic, followed by African American, <br />Caucasian, Asian and "ail others", in descending order. The menu should reflect the <br />ethnic, cultural and regional dietary preferences of the facility. <br />b. Food items within the meat, vegetable, fruit and dessert groups must be varied within <br />the week and not repeated on the same days each week. <br />c. Aesthetic. values, i.e. variety of foods and food preparation methods, color <br />combinations, textures, sizes and shapes, taste and appearance, <br />d. Seasonal .availability of foods. <br />e. Food preparation methods shall include baking, broiling and boiling in preference to <br />those methods which add extra fats and oils, such as frying. Spices, herbs and <br />garnishes shelf be used to enhance the taste and improve the visual appeal of meals. <br />f. Contractor shall include within its proposal sample holiday menus designed for <br />Easter, 411 of July, Thanksgiving Day, and Christmas Day using foods traditionally <br />associated with each holiday. <br />g. Contractor shall include within its proposal sample religious menus; including menus <br />that are pork -free, vegetarian, and kosher. <br />h. The Support Services Police Administrative Manager must approve religious diets <br />and requests will be submitted in writing to the Programs Supervisor. Diets must be <br />simple and conform as closely as possible to the food served to other inmates. <br />S. Vegetarian diets must be provided to all inmates who request them. <br />a. Therapeutic or restricted diets must be available upon medical authorization. Specific <br />diets must be prepared and served to inmates according to the orders of the attending <br />physician or dentist as directed by the responsible health authority official. Medical <br />diets verified by the Contractor's dietician must be specific and complete and will be <br />furnished in writing to the Contractor. Restricted diets must conform as closely as <br />possible to the food served to other inmates. <br />b. Menus must be reviewed and certified by a registered dietician and adjusted for age, <br />sex and activity according to the Recommended Dietary Allowances (RDA) stated by <br />the national Academy of Sciences. In addition, the menus must conform as closely <br />as possible to the United States Department of Agriculture (SDA) guidelines relative <br />to the amount of fat, cholesterol, sodium and dietary fiber. Contractor must provide <br />to the City written certification of this review for each cycle menu prior to <br />implementation. <br />RFP No. 20-025 .
