<br />. . <br />FOOD SERVICES FINANCIAL PLAN <br /> <br />ARAMARK Correctional Services has <br />developed the following financial plan that <br />addresses, in detail, the needs of the City of <br />Santa Ana. The criteria used in the <br />development of this plan are as follows: <br /> <br />~: <br /> <br />Annual Meal Counts: The estimated number <br />of annual inmate meals is based on <br />information provided at our site visit and in the <br />bid specifications. <br />Food Costs: Your menu has been costed at <br />the current pricing available from our suppliers <br />and based upon your bid specifications. <br />Labor: ARAMARK Correctional Services will <br />assign the management and labor set forth in <br />the labor section of this proposal to operate <br />the jail kitchen. Shift coverage will be <br />provided for all twenty-one meals. All salaries, <br />wages, workmen's compensation insurance <br />and other benefits will be borne by ARAMARK <br />Correctional Services. ARAMARK <br />Correctional Services will require all <br />employees to undergo a physical examination <br />at least as stringently as required by law. <br />ARAMARK Correctional Services Expenses: <br />The costs for other expenses such as: <br />laundry, uniforms, general liability insurance, <br />long distance telephone expenses, computer <br />for our use, office supplies, postage, food <br />products, taxes and licenses, employment <br />advertising expenses, and others as per your <br />specifications. <br /> <br />Expenses and responsibilities: Provide <br />adequate heat, lights, ventilation, and all <br />other utilities., repairs and maintenance of <br />kitchen equipment The County will provide <br />local business telephone service to the <br />vendor at no charge. Long distance, fax, <br />and modem lines will be ARAMARK's <br />responsibility. <br /> <br />. Extermination services and the removal of <br />trash and garbage from the facility trash <br />removal containers. <br />. General maintenance to the building <br />structure including, but not limited to, the <br />maintenance of gas, water, sewer, <br />ventilation, lighting, air conditioning, <br />refrigeration, duct work, floor coverings, <br />wall and ceiling surfaces. <br />. Adequate preparation, storage, serving <br />and holding equipment, utensils including <br />maintenance for same. <br /> <br />ARAMARK Responsibilities: ARAMARK <br />Correctional Services will provide the <br />managerial and administrative expertise to <br />operate the food service, commissary and <br />cafe programs. <br /> <br />ARAMARK Correctional Services will <br />continue to assume the responsibility for all <br />management functions including purchasing, <br />accounting, employee supervision, technical <br />assistance and planning. <br /> <br />ARAMARK Correctional Services will own the <br />food and supplies inventory. A physical <br />inventory is taken weekly by the Front Line <br />Manager and one other ARAMARK <br />Correctional Services employee. The <br />information is recorded in the computer, then <br />transmitted to the office in Oak Brook, Illinois. <br />Copies of inventory are always on hand for <br />inspection. <br /> <br />
