They acquired La Perla de Santa Ana Restaurant in Aug"l, 1998. The <br />restaurant's main menu items are seafood and Mexican food- The restaurant <br />is licensed by ABC for the sale of beer and wine. They are open seven <br />days a week from 11'00 a.tn, to 10;oo p.m. They also serve take-out plates, <br />provide delivery service to the local area and provide catering scsf" �Cey to <br />many groups and organizations. They have been very <br />developing their business. They believe that the main factors for their <br />success is excellent service, good quality of food and cleanliness of their <br />restaurant, <br />CREDENTIALS AND EXPERIENCE <br />Otto Bade has had many years of experience in the restaurant and fast food <br />business. His experience in a small food concession environment as in the <br />Santa Ana Zoo would be that Otto worked and successfully operated <br />numerous restaurants for Carl's 3r. Otto was trained as a troutbleshooter for <br />the restaurant chain. if there was a restaurant that was not producing <br />targeted profits, Otto was sent to train crows, improve quality controls and <br />increase sales. In many cases, he increased he Wes <br />a f hrict manager for <br />restaurants 15-20%. A few years later, <br />Otto Carl's where he managed 16 restaurants, While working at Carl's, Cato was <br />certified as a "food handler" ra kewho County <br />a un charge of food inspectors in of Orange first d <br />this program by Mr. Mcrryn <br />Orange County Health Department, Otto has completed a. semester in food <br />handling and operations. <br />Mirna Bade has approximately IS years in t11e food and restaurant industry. <br />She worked all areas of the food business from a waitress to being in charge <br />of food operations. <br />
