A major component of this program is a comprehensive fats, oils <br />and grease (FOG) source control program to reduce the amounts of these <br />substances discharged to the sewer collection system. The City is <br />required to develop and implement a FOG source control program by <br />December 30, 2004. <br /> <br />On August 4, 2003, the City Council approved an agreement with <br />Environmental Engineering and Contracting, Inc. (EEC) to perform a FOG <br />characterization study. This study involved the inspection of <br />approximately 500 of the 730 food service establishments (FSE's) in the <br />City to determine the causes of grease accumulation in the sewer <br />collection system. To date, approximately 375 FSE's have been inspected <br />with completion scheduled for June 2004. Data gathered from these <br />inspections also will be used to develop an effective grease control <br />program. <br /> <br />. Prior to implementation of a FOG source control program, the City must <br />.uPdate the municipal code to provide the necessary legal authority. The <br />legal authority must be adopted by July 30, 2004. <br /> <br />25G-1 <br />
