The Contractor shall furnish its own cash register and shall be responsible for posting all <br />food menus and prices daily, <br />H. REPORTS AUDITS AND ACCOUNTABILITY <br />Proposals should include samples of the following Contractor reports to the Santa Ana Jail <br />Support Services Manager, as well as any other reports that may be useful. <br />1. Monthly accountability reports must indicate sales totals, itemized expenditures, and <br />commission due the City. <br />2. Monthly inspection reports must detail the condition of Cafe equipment, any service or <br />maintenance performed, and repairs needed to Cafd equipment. <br />I. PROPOSAL SUBMISSIONS <br />1. As part of their proposal, each Proposer shall submit asample ten (10) day rotational <br />menu of hot and cold entrees as well as a menu of daily items proposed to be offered <br />and pricing for each rotational and daily item. <br />2. Payment to both the City and the Contractor shall be in the form of a percentage of the <br />Cafe's net profit each month for the period of the contract. Each proposer shall include <br />with theirproposal, the percentage of the CaWs net profit that will be paid to the City <br />each month during the period of the contract. <br />J. SECURITY <br />The following security requirements shall be in effect at all times. Failure to abide by any of <br />these items by any Contractor's employee may result in removal from the facility and or criminal <br />charges. <br />1. SECURITY SCREENING <br />a. All of the Contractor's personnel to work within the facility must successfully <br />complete a background investigation conducted by the Santa Ana Police <br />Department before beginning work. Contractor's employees that do not successfully <br />complete the background investigation shall not be allowed entry into the facility. No. <br />less than 45 days before an employee schedule to begin work, the Contractor shall <br />submit to the Chief of Police the following information for each employee to work <br />within the facility: I <br />• First name, middle name, last name <br />• Date of birth <br />• Current residence address <br />• Photocopy of valid government issued photo identification <br />• Photocopy of valid Social Security card <br />• Proof of U.S. citizenship or legal work status <br />RFP No, 20-025 Contracted Food Services and Inmate Commissary Page 38 of 57 <br />
